Green Chicken Curry

This is very Delicious Chicken Curry with nice Green gravy


Ingredients:

Chicken - 1 kg
Coriander leaves- 200 gm
Ginger garlic paste- 25 gm
Mint leaves- 50 gm
Curry leaves- 10-15 pcs
Coconut (Freshly chopped)-50 gm
Poppy seeds- 25 gm
Oil- 100-150 ml
Salt- to taste
Curd- 100 gm
Green Chillies paste- 2 tb spoon(adjust to taste)
Coriander seeds- 10 gm

Spices:

Cardamom- 4
Star anise- 2
Bay leaf- 3
Cloves- 4
black cardamom- 2
Cinnamon sticks - 2 inch

Preparation:

1) Crush coriander seeds.
2) Make paste of curry leaves, mint leaves, coriander leaves(by adding some water).
3) Make poppy seed powder and add chopped coconut then make paste out of it(by adding water).
4) Make green chillies paste.
5) Heat oil in pan and add "Spices" After few seconds add all the pastes with you.
6) Cook it on low flame make sure that you are not burning bottom.
7) Add curd and salt, mix well.
7) Add chicken and cook till it done soft and juicy.

Enjoy it with Rice......:)

Coconut Rice

Ingredients: 

 Cookedr ice - 4 cups
 coconut grated - 1 cup
 green chilly - 4 nos
 red chilly - 2 nos
 moong dal - 1 tb spoon
 urad dal - 1 tb spoon
 ground nuts - few (optional)
 other nuts - optional
 salt - to taste
 oil- 1 and half tb spoon
 curry leaves - few
 coriander leaves - 1/8th cup
 finely chopped onion - 1 no

 Preparation :

1) Wash and soak dal for 5 mins.
2) Cook rice and keep a side ( shouldn't be smashy)
3) Chop green chillies, onion and red chillies.
4) Grate the fresh coconut, Now heat oil in a pan.
5) Add onions, green chillies and salt, stir them till nice brown color.
6) Add moong dal and urad dal and mix it for 2 mins .
7) Now add curry leaves, red chillies and grated coconut and mix for 5 mins on low flame.
8) As they just done, now add rice to it and mix well.
9) finally sprinkle some coriander leaves on top and mix till the rice becomes hot.

Serve it hot with any gravy or with raitha, it goes well.

Here i used ground nuts and cashew nuts instead of dals, this is another variation , even you skip all dals and nuts ..:)

Vegetable Rice



Ingredients:

Basmathi Rice - 2 cups
Carrot - 2 nos
Potatoes - 2 nos
Tomatoes- 2 nos
Cauli Flower - 100 gm
Capsicum- 1 no
Green chillies - 4 nos (adjust)
Ginger garlic paste- 1 spoon
Oil- 2 tb spoon
Chopped onions - 2 nos
Coriander leaves - 1/4 cup
Salt - As per taste
Ginger garlic paste - 1 tb spoon
mustard seeds- 1/2th spoon (optional)
cumin seeds - 1/2th  spoon
turmeric - pinch (optional)

Rice making :

1) wash and soak rice for 20 mins .
2) add 1 spoon of salt and cook rice till almost done .
3) Strain out and spread on paper towel or on a plate so that all moisture will evaporate .

Meanwhile chop all the vegetables in required sizes and onions into thin long pieces.

Preparation :

1) Heat oil in a flat pan, add cumin seeds onions and  half of the salt you are required.
2) As the onion become golden brown then only you add ginger garlic paste and green chillies.
3) After one minute add all the vegetables and saute them for a while.
4) Add salt and allow it to cook on slow flame .
5) As the all the vegetables nicely cooked.
6) Sprinkle coriander leaves and add rice to it and mix well.
7) Check for salt and keep it on stove till all mixture become warm.

Serve it with any type of raitha or gravy, i like this recipe with chicken gravy...:)

Raitha


RAITHA

Ingredients:

curd(thick)- 250 gm
carrot- 50 gm
cucumber- 50 gm
onion- 50 gm
tomato- 50gm
coriander leaves - 1/4th cup
mint leaves - 1/8th cup
salt- 1 spoon (adjust to taste)
coconut powder(optional)- 25 gm
water- 1 glass
Grating Carrot

Grated Mixture

Process:

1) First peel out(remove) the skin of carrot, cucumber, onion, tomato.
2) Grate the above into small pieces. And make powder of coconut using blender.
3) Whisk(mix evenly) the curd and add salt.
4) Wash and cut coriander and mint leaves into small pieces.
5) Take all of them in bowl and mix well.

Serve it cool with Biryani, Pulavs, Bhagara rice, Fried Rice...!!!!

Gongura Pickle or Red Sorrel Leaves Pickle



Gongura  or Red Sorrel Leaves:

It is leafy vegetable. Gongura is very famous in India especially in Andhra Pradesh. The people from Southern part of India uses these leaves in many curries and making pickle. It is of sour taste.

Health Benefits:

1) It is good source of folate and vitamin B6.
2) They are rich in calcium, iron, vitamin C & A.
3) It increase hunger and gives taste to pallets.

Ingredients:

Gongura leaves - 500 gm
seasame seeds - 250 gm
green chillies - 100 gm (adjust to taste)
oil- 2 tb spoon
garlic - 10-15 pieces
salt - taste

For Seasoning:

oil-one tea spoon
mustard seeds- 1/2 tea spoon
fenugreek seed- few
curry leaves - few
cumin seeds - 1 tea spoon
turmeric powder- pinch

Preparations:

1) Dry roast the seasame seeds in a pan till they get coloured, don't blacken any part.
2) Heat oil in a pan add sliced green chillies and roast them till brown colour then remove and keep a side.
3) Now add gongura leaves any fry them on medium flame around 10 mins .
4) Take a blender add chillies and require salt make into coarse paste keep it in a cup
5) Add seasame seeds to blender and take out its powder.
6) Now make a coarse paste of leaves .
7) Mix garlic, seasame seed powder,  green chilli paste, and gongura paste in blender thoroughly.

Seasoning: 

1) Heat oil in pan, add mustard,  fenugreek &cumin seeds , curry leaves and turmeric .
2) As they done switch off the stove and add the paste to it and mix well.

Allow it to cool or keep a side for one or two days.

Enjoy this recipe with hot rice.....!!!!

Lady Finger Roast




Ingredients :

Lady finger - 250 gms
red chilli powder - 1 tb spoon
coriander powder- 1 tea spoon
salt - as per taste
oil- 2 tb spoon
masala - 1 tea spoon
coriander leaves- 1/4 cup

chopped lady finger


Preparation :

1) Wash and cut lady finger into round, thin pieces.
2) Take a flat pan add oil to it
3) Add chopped lady finger and fry them for 10- 15 mins on very slow flame.
4) As they 70-80% done, sprinkle red chilli powder, coriander powder, salt evenly.
5) After 2 mins sprinkle masala and coriander leaves and mix well.

Enjoy this snack  hot ...!!!

Ingredients :

eggs  - 4-6 nos
red chilli powder - 1 tb spoon
salt - as per taste
turmeric - pinch
cumin powder- pinch
coriander powder- 1 tb spoon
oil - 1 tea spoon
crushed curry leaves - 3 nos
ginger garlic paste - 1/2 tb spoon
oil - for deep fry
chana flour - 2 cups

Preparation :

1) Boil the eggs in water till 20 mins then change the water and remove shell.
2) Cut the each egg into 2 or 4 pieces. Or whole egg as a piece.
3) Take a cup add red chilli powder, salt, turmeric, cumin powder, coriander powder, crushed curry leaves(chopped very finely), ginger garlic paste and one tb spoon oil.
4) Mix then evenly and apply only egg pieces then keep them aside and allow it for marination.
5) Meanwhile  take 2 cups chana flour and add little salt and pepper to it then make thick dough such that it should stick to egg pieces evenly like a layer.
6) Heat oil and deep fry them till dark yellow (golden).
7) Drop them on paper towel to remove extra oil.
8) Enjoy it with green sauce or tomato sauce or you can eat directly with some chat masala..

1) Heat oil in a deep pan , add peanuts and fry them for 5 mins on slow flame until they become brown colour and take them out from oil.
2) Now add  mustard seeds ,chopped onion and green chlli after small break add ginger garlic paste fry them until it leaves raw flavour.
3) Now add lady finger , fry them till the half cook is done now add salt , red chilli powder,coriander powder, turmeric powder .
4) After 80% of cooking is done add fried pea nuts and mix them real good .
5) Sprinkle garam masala  and coriander leaves , now mix well

Serve it hot as with regular meals. It is very good stuff for liquor.

2) Wash spinach with fresh water and cut into small pieces , make sure that there is no insect
3) Heat oil in a dish add cumin seed , onion , ginger garlic and fry them until raw flavour goes away
4) Now add spinach , turmeric , chili powder , salt cook it for 5 mins
5) Add dal and coriander powder cook it finely
6) Add masala and coriander leaves , mix it real good

Serve it hot with rice, roti , chapathi , naans

Benefits of Fish And Basic Fish curry with Tamarind juice

coconut powder- 2 tb spoon
coriander leaves - a small bunch
oil-1 tb spoon
chopped donion - a small one
green chili - 2 no (slitted)
fenugreek powder - 1/2 tb spoon

Preparation:

1) Heat oil in pan , add green chili, chopped onion , ginger garlic paste fry them till the raw taste goes away.
2) Now add fish , salt , coriander powder, fenugreek powder  , red chili powder , mix them real good
3) Now add tamarind juice , onion paste, coconut powder ,cook it finely (do not stir while cooking so that piece remains as it is )
4) Add coriander leaves , keep lid on it for a while

Now serve it hot with rice , naan , roti ,

Spinach with Moong Dal (Healthy Recipe)

Spinach recipes are very good for health , so let know how to make spinach recipe with moong dal



Ingredients:

spinach - 500 gm
moong dal - 200 gm
red chili powder- 1 tb spoon
green chili - 4 no
salt - as per taste
cumin seeds - 1/4 tea spoon
onion - 2no
masala - 1 tb spoon
turmeric - a pinch
oil - 1 and 1/2 tb spoon
ginger garlic paste - 1/2 tb spoon
coriander leaves - a bunch
coriander powder - 2 tb spoon




Preparations :

1) Wash dal with fresh water and soak it for 10 min in fresh water .

2) Select fresh spinach and clean it with fresh water and cut it into small pieces .(make sure that there are no dust particles in spinach ).

3) Chop the onion into small pieces , and slit the green chili along the mid way (cut into small pieces)

Method:

1) Heat oil in a pan and add cumin seeds , chopped onion , little salt and green chili  fry them for 2 min until it gives nice color . Now add turmeric and ginger garlic paste stir it for a while .

2) Add spinach and sprinkle chili powder salt mix it evenly and cook it for 5 min then only , you can add soaked dal and coriander powder mix it perfectly and cook for 10 min on slow flame .

3) Generally this process is not required any water but you can add  small tea cup of water to it  , and cook it very well . Sprinkle coriander leaves on top .

Enjoy this recipe with roti , nans , chapathi , bread , rice  as well .

Cabbage Curry with Moong Dal and It's Benefits


Cabbage is a leafy vegetable and is used in many soups, salads and some times as remedy

Benefits of Cabbage :

Cabbage is excellent source of vitamin C
It is low calorie food
Is rich in Glutamin and Amino acids hence it is anti inflammatory
It is used in European folk medicine
Iodine : Cabbage is rich in iodine so it may also acts as goitrogen , so it controls Thyroid Glands

Ingredients:



cabbage - 500 gm

ginger garlic paste - half a tb spoon
masala - 1 tb spoon
chopped onion - 1 no
coriander powder - 1 tb spoon
chopped curry leaves - 5 no
chopped coriander leaves - 1/4 of cup
cumin seeds- 1/2 a tb spoon
mustard seeds - 1/2 a tb spoon
turmeric - a pinch

Preparation :

1) Wash the dal in fresh water and soak it for 5 to 10 min.
2)cut cabbage into small pieces (check for insects ) and wash it .
3) Heat oil in a flat pan add mustard seeds, cumin seeds as they just done
4) Add chopped onion, sprinkle little salt after 1-2 mins
5) Add ginger garlic paste, turmeric, chopped curry leaves
6) Saute them for 2 min on very low flame.
7) Now add  cabbage, red chili powder, coriander powder after 2 min add soaked dal.
8) Cover it with a lid and cook finely.
9) Add masala and coriander leaves .


Serve it with rice or nans, or roti , you can also have with bread slices .it gives awesome taste

How to make Tea and it's Benefits

Hai friends ,

You know this is very simple, before going to write how to make tea, let me share my own experience with tea making. I love to make tea very much around 9 years i used to make tea at my grand parents hotel. 

I used to stay with my grand parents when i'm doing my schooling. They have a small hotel in my town Dharmapuri, it is in Andhra Pradesh in India. To be frank i know how to make tea from my 4th standard. Along with my regular studies i used to help my grand parents in hotel by this way i came to know how to make tea and later on most of the recipes from my grandma and my sister's cooking .

So my surrounding people used to call me "pottoda" , i like that name very much when i was with my grand parent as it is given by my grand parents. But now i'm calling a boy who is selling tea  like chai wala chotu 


A Cup of Hot Tea  =  A Cup of Good Health

Drinking tea is very good for health. Following are both Benefits and Drawbacks ..

1) Bone Density : regular drinking of tea for long time may increase strength of bones 
2) Heart Disease : recently study in the general Circulation it is mentioned that drinking more than 2cups of tea in a day decreases the risk of death from Hear attack by 44%.
3) High Blood Pressure : Drinking a half cup of green tea or oolong tea reduces a person's risk of high BP by 50 %

Ingredients :

milk - 2 glass
water - 2 glass
tea powder- 4 spoons
sugar - 6 to 8 spoons (based on you , how much sweetness you like )
crushed black pepper - 2 nos (optional)
ginger - small piece (make thin slices)

Making :

Take a bowl add milk and water then lit the stove. After about 5 min of boiling milk add crushed balck pepper and ginger pieces . After a small break add tea powder , wait until tea powder goes down for the first time then only add your sugar . once again tea powder comes up boil until it goes down for the second time . now strain out tea and have it .

If you make tea in this manner it gives awesome taste.

coriander leaves - half a cup
coriander powder - 1/4th cup
oil-50 ml
mustard seeds - half a spoon
cumin seeds - 1 spoon
fenugreek seeds 1/4 spoon
masala -1 spoon
sesame seed powder -  1/2 cup (optional)
tamarind juice - 2 cups (sour taste )

Preparation Method :

First of all wash lady finger with clean water and cut them into small pieces as shown , while cutting check for insects , then chop the onions, green chili,coriander leaves ,curry leaves.


For the preparation of tamarind juice , take fresh sour type half a cup of  tamarind flesh , wash it and soak  for 5 to 10 min , then take out the juice .

Heat oil in a depth pan , add cumin seed , mustard seed, fenegreek seed, after a minute add chopped onion , green chili, ginger garlic paste , saute it for 3 to 5 min then add half of the salt .


Now add lady finger saute them 5 to 10 min on slow flame (don't allow to stick to pan ) keep on mix every time , then it will lose gum (glue), now add turmeric , red chili powder , coriander powder , sesame seed powder,also add next half salt  mix it real good after 2 min pour tamarind juice in it , boil it for 5 mins , now add coriander leaves , curry leaves , masala,  keep lid  for 2 mins ..

Ready to serve it gives sour hot taste ,,,,,,,,,,

dried fruits promote digestive health . they also contribute to healthy body weight
prefer fluids than solid food
take leafy vegetables twice in a week 
take juices like orange , milk shake , milk products..
last but not least don't wait to get hunger eat some thing always until you gain weight ....haha ...!!!! 

 CAUTION :

Don't try artificial food and medicine to gain weight it is not good for health and you will addict to them 

 my choice of salad :

Ingredients :

milk 100ml (15 min boiled)
cashew nuts 50gm
raisins 50 gm
dates 50 gm(flesh only)
banana 2
apple 1
grapes 100gm
olive oil half a spoon
sesame seed oil half a spoon
sunflower oil half a spoon
pineapple 50 gm
papaya 2 slices(remove seeds)
strawberry 5 nos
cherries 50 gm
gooseberry 10 (remove seeds)
coconut water 1 glass
normal water 4 glass
coconut milk half glass 
sugar 250 gm
ghee to fry all try fruits
salt 1spoon
ice cream according to your interest any flavour and amount you like to have (optional)

You can also add any seasonal  fruits here

Preparation :

Take flat pan and heat ghee  , fry all the dry fruits on very slow flame 2 min easy (do not black any part saute them evenly if you blacken any part it gives odd taste ) grained them into small pieces (don't do like powder)

Now take  banana., apple , pine apple , papaya  cut them into small pieces  

Take a big bowl add all the prepared dry fruits mixture and small pieces of  fruits and  milk , water and oil, salt , sugar, rest of the ingredients 

Mix it real good and keep it in refrigerator for 10 -15 mins.then mix ice cream serve ..

 Here you can skip any thing .. except sugar , water, dry fruits , ghee, milk

Healthy Amaranth Leaves and Moong dal Fry

It is highly nutritional food for all. Once in a week it is compulsory in our diet.





Nutritions: 

every 100 gm consists of
potassium 641 mg
calcium 209 mg
phosphorus 72 mg
magnesium 55 mg
sodium 21 mg
iron 2.3 mg
in little amounts zinc , copper , manganese , Florine  are also available

 Vitamins :

 vitamin A , C, B6 , foliate, niacin , thiamine , proteins & amino acids  2.1 gm

Uses:

It increases hunger 
Due to presence of calcium it gives good support to bones 
Iron increases haemoglobin in blood
It  is also helpful for heart patients 
It also controls the liver diseases .

Ingredients :

amaranth leaves 500gm
moong dal 100gm
ginger garlic paste 50 gm
oil 50 ml
turmeric a pinch
salt to taste
coriander powder 2 spoons
mustard seeds half a spoon
cumin seeds half a spoon
fengreek seeds 10
green chili 8
red chili powder 1 spoon
finely chopped onion 2
masala 1 spoon

Method of Preparation :

1) Wash and soak moongdal for10 min, meanwhile wash and cut the leaves into small pieces and add salt to green chili and crush them into small pieces in a grinder .
2) Now take a pan and add oil, on hot oil add mustard seeds, fenugreek seeds, cumin seeds.
3) After few seconds add ginger garlic paste, chopped onion and turmeric, green chili paste.
4) Also add half of the salt to it
5) After 1 min add amaranth leaves and red chili powder, salt, coriander powder keep a lid on it
6) When 50% of cooking done add moong dal and cook it finely.
7) Finally add masala and serve on hot .

It is generally served with roti and rice .

Mango Special Juice

Mango is the King of all fruits . it is the awesome fruit available in hot summer.
 It is very helpful fruit  as it has so many useful vitamins and proteins and all.

mango fruit consists of :
in every 100 grams
calcium  14 m.g
proteins 0.6%
carbohydrates 16,9%
iron 1.3 m.g
vitamin C

 Uses :
fully ripen mangoes are rich in sugar , but green mangoes are rich in vitamin C  and vitamin A which is helpful to eyes. If you  sprinkle little salt on them they reduce uneasyness , if u eat every day onemango and then after a glass of milk it will increase weight also so it is very useful for thin people.


Ingredients :


mango 500 gm
sugar 100 gm
milk 100 ml
coconut water one glass (normal water you can use)
fresh coconut powder 100 gm
cardamom 5

 Preparation :


add sugar to milk and boil them for 10 to 15 mins on slow flame . take ripen mangoes , wash them with fresh water  then remove skin and take out all flesh keep in a bowl .
smash cardamom , and prepare coconut powder now mix all . keep it in refrigerator for 5 mins
    wow !!! we prepared fantastic mango juice

Mango - Moong Dal Fry

Ingredients :

mango 4 nos (small)
moongdal 100 gm
oil 50 ml
chilli powder 1 spoon
salt to taste
turmeric a pinch
ginger garlic pate 1 spoon
chopped onion 2 no
cumin seeds  half a spoon
masala 1 spoon
coriander leaves half a cup
curry leaves a bunch (small)
green chilli 4
mustard seeds half a spoon
coriander powder 1 spoon

Preparation :

1) First of all wash the mango and soak them for 10- 15 mins, so that you can easily remove skin.
2) Now peel out skin and cut them into small piece (remove seed ).
3) Now wash the dal and soak it for 10 mins meanwhile prepare the green chilli, onions, coriander leaves
4) Heat oil in a pan, add mustard seeds, cumin seeds as they just done add onion and green chilli saute them.
5) Add turmeric and chilli powder and half of the salt after one min add your mangoes  cook them 5 mins .
6) Now add dal, coriander powder and  next salt keep a lid on it and cook on slow flame .
7) Cook both dal and mangoes till 70 - 80% then only it leaves crispiness.
8) Add masala, curry leaves and coriander leaves put off flame and keep lid on it for 2 more mins.

Hmm..Tasty sour moongdal mango curry is ready to eat .

You can have it with rice , roti , or else nans..

Healthy Food Millet Rice

Millet rice :
*the words in the braces, describe the contents in telugu language
millet powder (jonna pindi) :500 gm
the millet powder should be smashed into small pieces.
salt : as per required
water : for cooking
Process :
Boil water in a dish/ bowl
while water is dancing, add your millet
cook it nicely like normal rice.
Caution -
Do not strain any water. If water is excess strain into a bowl , which we can use as soup.
Soup :
strained water : 1 glass
green chilli paste : 2 no:s
red chilli powder : half spoon
salt : as per taste
Tomato sauce : 1 spoon
corn seeds : 1 spoon
oil : half spoon
ginger garlic paste : a pinch

Fry green chilli, ginger garlic paste, tomato sauce and corn seeds . Now add strained water and salt. serve it with your rice.
As it contains lot of vitamins, in olden days, people used to eat this recipe regularly with red chilli chutney and yogurt also.
Generally this is used in summer for saving the body from heat cramps and sunstrokes.
