Gongura Pickle or Red Sorrel Leaves Pickle



Gongura  or Red Sorrel Leaves:

It is leafy vegetable. Gongura is very famous in India especially in Andhra Pradesh. The people from Southern part of India uses these leaves in many curries and making pickle. It is of sour taste.

Health Benefits:

1) It is good source of folate and vitamin B6.
2) They are rich in calcium, iron, vitamin C & A.
3) It increase hunger and gives taste to pallets.

Ingredients:

Gongura leaves - 500 gm
seasame seeds - 250 gm
green chillies - 100 gm (adjust to taste)
oil- 2 tb spoon
garlic - 10-15 pieces
salt - taste

For Seasoning:

oil-one tea spoon
mustard seeds- 1/2 tea spoon
fenugreek seed- few
curry leaves - few
cumin seeds - 1 tea spoon
turmeric powder- pinch

Preparations:

1) Dry roast the seasame seeds in a pan till they get coloured, don't blacken any part.
2) Heat oil in a pan add sliced green chillies and roast them till brown colour then remove and keep a side.
3) Now add gongura leaves any fry them on medium flame around 10 mins .
4) Take a blender add chillies and require salt make into coarse paste keep it in a cup
5) Add seasame seeds to blender and take out its powder.
6) Now make a coarse paste of leaves .
7) Mix garlic, seasame seed powder,  green chilli paste, and gongura paste in blender thoroughly.

Seasoning: 

1) Heat oil in pan, add mustard,  fenugreek &cumin seeds , curry leaves and turmeric .
2) As they done switch off the stove and add the paste to it and mix well.

Allow it to cool or keep a side for one or two days.

Enjoy this recipe with hot rice.....!!!!

Grandma's Special Country Chicken Curry

A True Desi Recipe that will leave your palate wanting for more..........!!!!!!!!



Ingredients:

chicken bird  - one normal size (1.5 - 2kg)
ginger garlic - 1 and 1/2 spoon
oil- 2 tb spoon
coconut powder - 1 tb spoon
onion - (1+1) nos
coriander leaves - 1 cup
mint leaves - 1/2 cup
green chili - 4 nos
red chili powder - 1 tb spoon(as per taste)
turmeric - a pinch
coriander powder - 1 tb spoon
cloves - 4 nos
cinnamon -4 nos(1 inch each)
poppy seeds-2 tb spoons
black pepper - 4-6 nos
cardamom - 4 nos
mace(japatri)-2 pieces
black cardmom - 2 nos
salt - as per taste
bay leaves - 2 nos

Preparations of Chicken:

1) Take a 1.5 - 2 kg country chicken bird (desi), cut off it's head and remove feathers .
2) Roast it evenly for 15-20 mins on charcoal till the skin turns to dark brown .
3) Apply turmeric and oil mixture on it and wash it with water
4) Now cut all the bird into required size pieces .

Preparation of Masala :

1) Heat 1 tb spoon oil in a pan  then add cloves, cinnamon, cardamom, bay leaves, black cardamom, black pepper,  mace, green chilli season them on very slow flame for 5 mins
2) Now add coconut powder and poppy seeds then roast these till the color changes.
3) Put all these spices in blender(grinder) make coarse paste by adding little water.
4) Take one onion and make its paste in blender and mix it with ginger garlic paste.

Preparation of Curry:

1) Take a dish add oil and chopped onion, sprinkle little salt & fry till it is 70% cooked.
2) Now add onion and ginger garlic paste and  fry it till raw flavour goes away.
3) Add chicken, red chilli powder, coriander powder, turmeric and salt .
4) Fry chicken for 10 - 15 mins on medium flame, don't allow blackening of any part.
5) Now add water(till whole chicken is immersed and then add one extra glass) and prepared masala.Cook  finely.
6) Finally add coriander leaves and mint leaves and switch off stove.

Caution: Please adjust spices according to your taste.

Enjoy this delicious dish with naans, roti, rice ....!!!!!

Benefits of Fish And Basic Fish curry with Tamarind juice

Fish and other sea foods are a boon to human beings. Eating fish once or twice a week may reduce the risk of diseases ranging childhood asthma to prostate cancer.Fish is low in fat , high in protein and good source of omega 3 fatty acids .Fish is a package of vitamins and minerals.

Benefits of fish :

1) lower the blood pressure
2) fish contains satisfactory level of magnesium , phosphorus , iron and copper
3) Asthma: children who eat fish may be less likely to develop asthma
4) Cancer: who didn't eat fish had between double and treble the risk of developing prostate cancer
5) Brain and Eyes : Omega -3 fatty acids helps for brain tissue and retina .
6) Depression : people who regularly eat fish have a lower incidence of depression.

Disadvantage: 

Fish is not for all at all times . If you have regular chest pains are not advised to eat . fish oil is natural blood thinner , so more 3g per day may leads to excess bleeding.


Ingredients:

fish - 10 pieces(medium size)
tamarind juice- 2 cups
onion paste - 1/2cup
ginger garlic - 1 tb spoon
salt - as per taste
chili powder- as per taste
coriander powder- 2 tb spoon
coconut powder- 2 tb spoon
coriander leaves - a small bunch
oil-1 tb spoon
chopped donion - a small one
green chili - 2 no (slitted)
fenugreek powder - 1/2 tb spoon

Preparation:

1) Heat oil in pan , add green chili, chopped onion , ginger garlic paste fry them till the raw taste goes away.
2) Now add fish , salt , coriander powder, fenugreek powder  , red chili powder , mix them real good
3) Now add tamarind juice , onion paste, coconut powder ,cook it finely (do not stir while cooking so that piece remains as it is )
4) Add coriander leaves , keep lid on it for a while

Now serve it hot with rice , naan , roti ,

Elephant yam with Tamarind juice





Ingredients :

Elephant yam - 500 gm
onions - 4 no
cuscus paste - 1/2 cup(coconut and poppy seeds)
coriander powder - 1/2 cup
garam masala powder - 1 tb spoon
oil - 4 tb spoon
tomatoes - 2 no
ginger garlic paste - 1 tb spoon
green chili - 4 no
cloves - 4 no
cardomom - 4 no
cinnamon sticks - 4 small pieces
biryani leaves - 2
curry leaves - 1 bunch
coriander leaves - 1 bunch
lemon - 2 no(optional)
tamarind juice - 2 cups
turmeric - pinch
salt - as required
red chili powder - as required




Initial Preparations :


1) Clean yam with fresh water and take it in a dish,  cover up it with water and add Guava leaves or Tamarind leaves boil them for 10 min . Peal out the skin and cut them into small pieces

2) Wash and cut green chili along the mid way , cut 2 onions into small pieces and wash them with fresh water . Wash and cut tomatoes into small pieces.

3) Make a paste of remaining 2 onions and prepare cuscus paste(coconut + poppy seeds)


Cooking Method :

1) Heat oil in a pan,add cloves ,cinnamon,cardomom,biryani leaves.Next to them green chili,chopped onion,add little salt and fry them for 2 min,add ginger garlic and curry leaves

2)  Now add yam pieces and tomatoes and fry for 2min,then add coriander powder,chili powder ,salt,turmeric,cuscus paste,onion paste and mix them well and cook it well

3) Add tamarind juice and bring it to boil,now add garam masala and coriander leaves

4) Sprinkle little lemon juice

Enjoy this recipe with rice,roti,naans,chapati,bread

Red Chili Powder Recipe (Bachelor Special)



Red Chili Powder Recipe it sounds like something special and new  It is specially for people in hurry . I suggest specially for Bachelor's as they won't get time to prepare curries every time . It is one of the substitute of your pickles .

Many times in home if we are in hurry my mom used to make this and this can be used for 10 days without losing it's taste . Even now also every time  when i'm coming from home to hostel i bring with me as we won't get spicy food at Rourkela . What i do is , i just mix a spoon of this powder in my regular curry so that i will get my own required spiciness .

You can also eat this with rice directly still it gives some new flavour . You can also add in your regular dal and recipes .

Ingredients :


red chili powder- 2 cup
coriander seeds - 1/2 cup
curry leaf powder - 2 tb spoon
chana dal (Bengal gram)- 1/4 cup
garlic - 10 no
salt- 4 tb spoons (as per your taste )
oil -2 tb spoon
mustard seeds - 1/2 spoon
cumin seeds -1 spoon

Preparations:

1) Heat a flat pan add chana dal make dry roast for a min on slow flame , now add chopped garlic, coriander seeds, curry leaves .

2) Saute them evenly for 5 min on slow flame so that they loose their raw flavour .

3) Don't blacken any part while roasting stirre every time to fry them evenly.

4) Drop them in  a blender  make a coarse powder (not fine powder) transfer it to a bow

5) Take the same pan add oil , after heating oil add mustard seeds and cumin seeds after a small break swith off the flame .

6) Now add chili powder,salt and prepared mixture mix it real good so that both masala and chili powder mix well

Wow we prepared it  , taste it if you need add little more salt allow it to cool then transfer to a air tight glass bottle .Then you can use it for 10 days


Try this and enjoy a new dish , we can use this in many places and we can prepare in many ways we will see it later ...

Healthy Amaranth Leaves and Moong dal Fry

It is highly nutritional food for all. Once in a week it is compulsory in our diet.





Nutritions: 

every 100 gm consists of
potassium 641 mg
calcium 209 mg
phosphorus 72 mg
magnesium 55 mg
sodium 21 mg
iron 2.3 mg
in little amounts zinc , copper , manganese , Florine  are also available

 Vitamins :

 vitamin A , C, B6 , foliate, niacin , thiamine , proteins & amino acids  2.1 gm

Uses:

It increases hunger 
Due to presence of calcium it gives good support to bones 
Iron increases haemoglobin in blood
It  is also helpful for heart patients 
It also controls the liver diseases .

Ingredients :

amaranth leaves 500gm
moong dal 100gm
ginger garlic paste 50 gm
oil 50 ml
turmeric a pinch
salt to taste
coriander powder 2 spoons
mustard seeds half a spoon
cumin seeds half a spoon
fengreek seeds 10
green chili 8
red chili powder 1 spoon
finely chopped onion 2
masala 1 spoon

Method of Preparation :

1) Wash and soak moongdal for10 min, meanwhile wash and cut the leaves into small pieces and add salt to green chili and crush them into small pieces in a grinder .
2) Now take a pan and add oil, on hot oil add mustard seeds, fenugreek seeds, cumin seeds.
3) After few seconds add ginger garlic paste, chopped onion and turmeric, green chili paste.
4) Also add half of the salt to it
5) After 1 min add amaranth leaves and red chili powder, salt, coriander powder keep a lid on it
6) When 50% of cooking done add moong dal and cook it finely.
7) Finally add masala and serve on hot .

It is generally served with roti and rice .

Mango Special Juice

Mango is the King of all fruits . it is the awesome fruit available in hot summer.
 It is very helpful fruit  as it has so many useful vitamins and proteins and all.

mango fruit consists of :
in every 100 grams
calcium  14 m.g
proteins 0.6%
carbohydrates 16,9%
iron 1.3 m.g
vitamin C

 Uses :
fully ripen mangoes are rich in sugar , but green mangoes are rich in vitamin C  and vitamin A which is helpful to eyes. If you  sprinkle little salt on them they reduce uneasyness , if u eat every day onemango and then after a glass of milk it will increase weight also so it is very useful for thin people.


Ingredients :


mango 500 gm
sugar 100 gm
milk 100 ml
coconut water one glass (normal water you can use)
fresh coconut powder 100 gm
cardamom 5

 Preparation :


add sugar to milk and boil them for 10 to 15 mins on slow flame . take ripen mangoes , wash them with fresh water  then remove skin and take out all flesh keep in a bowl .
smash cardamom , and prepare coconut powder now mix all . keep it in refrigerator for 5 mins
    wow !!! we prepared fantastic mango juice

Mango - Moong Dal Fry

Ingredients :

mango 4 nos (small)
moongdal 100 gm
oil 50 ml
chilli powder 1 spoon
salt to taste
turmeric a pinch
ginger garlic pate 1 spoon
chopped onion 2 no
cumin seeds  half a spoon
masala 1 spoon
coriander leaves half a cup
curry leaves a bunch (small)
green chilli 4
mustard seeds half a spoon
coriander powder 1 spoon

Preparation :

1) First of all wash the mango and soak them for 10- 15 mins, so that you can easily remove skin.
2) Now peel out skin and cut them into small piece (remove seed ).
3) Now wash the dal and soak it for 10 mins meanwhile prepare the green chilli, onions, coriander leaves
4) Heat oil in a pan, add mustard seeds, cumin seeds as they just done add onion and green chilli saute them.
5) Add turmeric and chilli powder and half of the salt after one min add your mangoes  cook them 5 mins .
6) Now add dal, coriander powder and  next salt keep a lid on it and cook on slow flame .
7) Cook both dal and mangoes till 70 - 80% then only it leaves crispiness.
8) Add masala, curry leaves and coriander leaves put off flame and keep lid on it for 2 more mins.

Hmm..Tasty sour moongdal mango curry is ready to eat .

You can have it with rice , roti , or else nans..

Corn Seed Special Dish ( Mokkajonna Garelu)

Today's special my favourite dish 

Ingredients :


corn seeds (half smashed)- 500 gm
ginger (finely chopped) - 50 gm
 sugar - a pinch

garlic & cumin seed paste - 50 gm
finely chopped green chilli - 5 no
coriander leaves paste - 50 gm

mint & curry leaves - 50 gm 
spring onions(finely chopped ) - 50 gm
coriander powder - 1 tb spoon
chilli powder - 1 spoon 
salt as per taste 
soaked moong dal - 50 gm
gram dal sprouts - 50gm


preparation :

Smash the seeds , and mix the all ingredients except oil no need to add any extra water . 
The water is already woozed out from corn seeds if necessery add litle water . make this as a thick dough  like your roti dough .

Now take a thin cloth and make dough as small balls and press them on the cloth so that they should be like thick plates 

Now heat the oil in a pan and defry the prepared poori until it gives a perfect colour . remove remaining oil with paper towel


 Serve hot with sauce (generally) , corinder pickle , or coconut pickle  .. but if u have this with chicken soup it gives awesome taste ...
 You can also have with normal dinner ..
